I was back at home, and out of my apartment for the week so today’s food was a little different than it typically is. For breakfast, I didn’t have my “usual,” but instead had two slices of (slightly burnt..oops!) Ezekiel cinnamon raisin bread drizzled with maple syrup and two bananas. I also had a cup of coffee, with some almond milk added to it.
My mom has a huge container of herbs, and the basil was growing super tall. I picked off several stems and started to dry them to make some dried basil. It’s really easy to do! All you have to do is pick some stems of an herb, then tie a string (yarn or twine works well) to the end of the stem, and then tie each stem to a coat hanger. Hang the hangers in a dark, dry closet for a few weeks and you’ll have some awesome/flavorful dried herbs! Super simple and inexpensive!
A few hours after breakfast, I fixed an amazing lunch. I fixed a Spinach Veggie Wrap (have you checked out my recipe for it?!) with an apple, and a bowl of leftover rice and veggies. I mixed in some curry simmer sauce and nutritional yeast into the rice dish for some added flavor.
About thirty minutes later, I was in the mood for something sweet so I fixed a little bowl of Trader Joe’s dairy-free ice creams; two scoops of chocolate cherry soy ice cream and one scoop of their chocolate coconut ice cream. What an awesome combination!
My hair is naturally blonde, but after about five years of dying it brown I’m slowly making my way back to my natural blonde color. I went to get my hair highlighted, which took about two hours. Once I was all finished I came back home and fixed my green smoothie and shared it with my sister.
After the smoothie, I had some Trader Joe’s popped chips, and some carrots with red pepper hummus.
After a nice visit with my grandparents, it was time for some dinner. Before dinner, my sister and I went to pick (and eat) some blueberries. My aunt has about seven plentiful blueberry bushes in her backyard, they were delicious and more importantly free! It always feels so awesome to be able to pick your own food. For dinner my mom made some roasted veggies, potatoes, and sautéed okra…a perfect summer time meal!
A few hours later before heading to bed, I had about 5 dates, with a handful of almonds (of course forgot to take a photo).
I admire you. Maybe I’ll learn from you.
