I’m back in my apartment this week, which means back to my typical breakfast! Two slices of Ezekiel bread with peanut butter and blueberry jelly. I had along side it two yummy peaches and a banana with some coffee. I’ve been sprinkling a little bit of cinnamon into my coffee grounds before brewing it to give it a little extra kick. Also, I think I’m secretly wanting it to hurry up and be fall time.
I’m the president of our dietetics club at school, and we have a club expo for all the students to check out all of the clubs on campus. So one of my friends and I spent about two hours working on a tri-fold to have displayed on our table. I think it turned out awesome!! After a fun morning of arts and crafts, I snacked on a banana and some dates before fixing some lunch.
For lunch, I heated up two baked potatoes from the night before, and put some Earth Balance (vegan butter) on them. Alongside the potatoes I had some carrots with hummus.
About an hour later, my sister (who is in town visiting) wanted to go on a little adventure. Before we left, I had some of Trader Joe’s green juice.
For our adventure, we drove up to an awesome overlook of campus. Super cool view!!
After some shopping, we came back to my apartment to fix dinner. A classic dinner for us is rice, veggies, curry sauce, and avocado. So that’s basically what we had. Rice, peppers, onions, broccoli, garbanzo beans topped with curry simmer sauce and some mashed avocado. We enjoyed our yummy bowls on the porch and watched a beautiful mountain sunset.
After dinner, and cleaning everything up we wanted some cookies. There is a local cookie shop, Appalachian Cookie Co. that makes the best cookies ever. They have a few vegan cookies, so I got the Yosef cookie with is an oatmeal cookie with nuts and chocolate chips…it’s delicious! So we each got a cookie, and I had mine with a glass of almond milk. The perfect way to end the day!
I love baked potatoes! That’s awesome you are the president of your dietetics club! Our club often has speakers come in and I really enjoy attending the meetings. Are you an undergraduate?

Yes, baked potatoes are the best!! And that’s awesome you are in one as well…I love the concept of a dietetics club and all the opportunities it brings! And yes, I am about to start my last year to complete my undergrad in May!

This all looks great! I love reading “what I eat in a day” features because it’s so interesting to see what other vegans eat. Everything here looks very nutritious and yummy 🙂
