While my bread was toasting, and water was brewing for my coffee I had a few sprays of my B-12 supplement and ate half of a Brazil nut as a selenium supplement. Did you know that one Brazil nut has your daily dose of selenium?! Pretty cool!
Finally…breakfast is served! (not pictured is a second banana I ate after eating this!)
After breakfast, it was time to head to the farmer’s market with my friend (and fellow nutrition major) Lauren. The farmer’s market in Boone is incredible! There is always an abundance of fresh fruits, vegetables, flowers, herbs, plants, jewelry, crafts, and great music. We loved that this farmer was selling his “tomatoes with issues”…great way to reduce food waste!
I ended up getting a bunch of organic chard, and lots of little heirloom tomatoes (also organic).
Lauren and I had planned a hike for the day, so we packed up a bag and headed to Earth Fare to grab some pre-hike snacks! I tried out this new kombucha that I’ve never tried before. It was pretty good, but wasn’t as carbonated as I like. I usually get GT’s kombucha and every time I try a different brand I regret it because GT’s is just so good!
After our Earth Fare stop, we headed up the mountain to our hiking destination. While in the car, I munched on some carrots and hummus which I forgot to take a picture of.
We hiked up Rich Mountain, which was about 6 miles round trip. It was perfect weather, and a great hike! About half way up, we stopped in a field and had some food. I snacked on a banana, and some tomatoes wrapped with chard leaves. Yum!
Once we made it to the top, we hung up our hammocks and both ended up falling asleep! Before taking a nap I ate a Clif bar and an apple.
On our way down, we bonded with some cows that were eating their dinner. We talked about how giving up meat makes us appreciate animals so much more and really able to develop a love and compassion for them, even if that wasn’t our original intention.
Once I was home I was ready for food! I’ll be the first to admit that this dinner doesn’t look every appetizing, but I promise it was delicious! It’s a big bowl of potatoes, broccoli, tempeh, peas, onions, salsa, nutritional yeast, and spinach.
After dinner and a shower, I popped some popcorn (while snacking on some dates, not pictured) and headed over to Lauren’s house to end the day watching NutritionFacts videos, and hanging out.
