What a beautiful Saturday we had up on the mountain! Clear skies, a light breeze, and sunshine! My morning started off with a classic Samantha breakfast.. two slices of Ezekiel bread, one with peanut butter the other with blueberry jelly, a banana, and a cup of coffee. I added some almond milk and a few drops of stevia into my coffee, not sure why I’m still into the almond milk in my coffee considering I’ve been a die hard black coffee girl for the past six years. But maybe times are changing in my morning coffee mug.
After breakfast, I headed over the the farmer’s market to help our dietetics club table. We were there promoting local food, as well as sharing the volunteer work our club is doing throughout the community. It was fun getting to people watch, and listen to the beautiful music that is always playing throughout the market. While there, I bought and munched on some yummy kale!

After the market, I made a stop at my favorite thrift store in Boone, Ram’s Rack ! I got a dress and two shirts for three bucks!
Once I got home, I made a wrap with my fresh kale from the market, avocado, sprouts, and tempeh. I also enjoyed a huge apple with it.
After lunch, I had a meeting with the High Country Vegans (if you’re from the Boone area, check out their FB or their Meetup page!) to help plan and organize a Vegan 101 class that a group of us are teaching in a few weeks. I enjoyed quite a few of these date and almond rolls. They’re basically just blended up dates rolled in crushed up almonds, and are seriously amazing! I also had some of this yummy chocolate Bark Thins. Don’t let this small serving fool you, I had about four more of these servings of date rolls and chocolate bark!
Once I got home from planning and having some awesome vegan conversation, I was ready for some dinner! I had a baked sweet potato with curry simmer sauce and avocado on top, some baby carrots and another wrap. I don’t know why, but I’m obsessed with wraps right now..so easy and delicious! In this wrap, I put hummus, sprouts, spinach, tempeh, and cucumber slices.
What a fun day! The vegan club sounds especially exciting.
I love wraps and tempeh, and I’d really like to pack your lunch up for my lunch tomorrow! 😀

Tempeh is so yummy..especially in wraps! I actually just made one to take to lunch tomorrow, I’ll think of you when I’m eating it! 🙂

So nice that you’re so plugged in with people that you have a lot in common with 🙂 And do you cook your tempeh before putting it in wraps? And if so, how? I’m a total tempeh newbie! P.s. BARK THINS! SO good.

Yeah, it’s awesome having some like minded people to connect with! 🙂 And yes! I just sauté strips of tempeh in a pan until they get browned and crisp! I’m hoping to do a step-by-step blog post on how to cook tempeh/tofu soon!

I think it’s really awesome that you’re planning a vegan 101 class, it’s really important for people to know how to be vegan to avoid any sort of deficiencies. Oh and 3$ for a Dress and two shirts, that’s incredible!!

Yeah, I’m excited about showing people how easy it is to be vegan! It should be fun! And definitely, you can’t beat $3 dress and shirts!
