As you may have noticed, I took a much needed…yet longer than expected hiatus from blogging. With nutrition club responsibilities, final projects, a brutal final’s week, taking the GRE, and a busy holiday season, blogging unfortunately got pushed to the back burner for a while.
But I think I’ve given myself a long enough break, because I’m ready to get back to blogging about food, recipes, and all things nutrition and health!
A little update on the past three months…
Traveled to the beach, and the mountains over fall break..
Taught a kid’s cooking class on how to make hummus
Enjoyed my last fall in the beautiful Boone mountains
Attended my first vegan Thanksgiving potluck (it was delicious!)
Cooked my first vegan Thanksgiving for my family that included Earth Balance mac & cheese, garlic roasted brussel sprouts, curry roasted carrots, stuffing, and shepard’s pie
Spent some quality time with my family
Got to watch my older sister graduate from Appalachian with a degree in Elementary Education (it will be my turn in about four months!!)
Survived one of my last final’s week as well as taking the GRE, it was about as painful as it sounds
Had a relaxing, family-filled Christmas
Started working on my application for dietetic internships (a post-graduate 1200 hour internship that is the next step to becoming a registered dietitian)
Which is making me feel a little like..
Be on the lookout for some new and exciting blog posts! Sorry for going MIA for so long, but I’m looking forward to putting out some awesome content this year!
