What I Eat In A Day | March 5, 2016

I started off the morning with one of my favorite breakfasts. An Ezekiel english muffin with a slice of chao cheese melted on top, sautéed onion and tempeh, topped with avocado slices and some sirracha. This is a great savory breakfast that is quick and easy to make! I had a banana along side it, and a hot cup of black coffee.

My family and I traveled a few hours to watch my little sister play in a soccer tournament, so you’ll see quick a few snacks in this What I Eat In A Day post. I snacked on a Clif Bar on the drive there, which is probably one of my favorite snacks.

While watching her game, I snacked on some clementines, and dates rolled in coconut!

On the drive home, I snacked on my latest discovery.. sea salt & black pepper Triscuits! They are so flavorful and delicious!

Once we got home, I cut up a ripe juicy mango to snack on before making some dinner.

For dinner I made my family some delicious vegan pizza! The dough was just a simple pizza dough recipe (flour, yeast, and water). The sauce was a tomato sauce simmered with fresh basil and garlic. The toppings included sautéed peppers and onion, veggie chorizo, vegan parmesan cheese (blended up nutritional yeast and cashews), and spinach.

Along side the pizza, I had a salad with lettuce and spinach, broccoli, carrots, tomatoes, and a simple Italian dressing.

For a late night treat, I enjoyed a small bowl of So Delicious ice cream.
