Lately, I’ve been starting off most mornings with this combination: greens powder & supplements. The supplements that I take every day vary depending on how I’m feeling, or what I think I need more of. Most mornings I stick with these three supplements: astragalus (immune support), Vitamin D (winter months can often result in depleted vitamin D stores), and a vegan probiotic (for a happy tummy).
I’ll be honest, I’ve yet to find a greens powder that doesn’t taste gnarly. This one by Barlean’s is packed with lots of goodness but the taste is definitely strong. I’ve found mixing a scoop of greens powder with some orange juice helps the “medicine” go down much better. I add about 1/3 cup of orange juice into a small jar, a scoop of greens powder and then shake until combined. It takes about three gulps and I’ve already gotten in a bunch of greens, antioxidants, fiber, and nutrients for the day.
I prefer doing this rather than making a smoothie, because sometimes making a smoothie is too time consuming, and so mixing it with some juice is alot easier for me.
Days that I have a little more time in the morning, I usually end up making some sort of scramble. In today’s scramble I sautéed onions, peppers, mushrooms, kale, and hash browns. I topped it all with some nutritional yeast and chipotle sauce.
I usually have tofu on hand, but this day I unfortunately did not. To “replace” the tofu I used more mushrooms and hash browns that usual to help make it a little more hearty.
A couple hours later I enjoyed a warm mug of Yogi tea and a spotty, ripe banana. I absolutely LOVE this immune support tea. It taste so delicious and has been a great way to build up my immune system during this crazy flu season.
Later in the day I sipped on some Gingerade kombucha by GT’s. This is my go-to kombucha, I love the GT’s brand and the Gingerade flavor is by far my favorite. It is so refreshing and a great pick me up in the middle of the day.
For a late lunch I made a delicious sandwich with Just Chipotle Mayo, Tofurky deli meat, Follow Your Heart pepper jack cheese, mixed greens, and sprouts. It was seriously the best sandwich ever; so filling and satisfying. I ate some carrots and hummus along with it (not pictured).
For dinner I tried out a new recipe (to me) from the Rabbit & Wolves blog which I found through Pinterest. I’ve been obsessed with recipe hunting on Pinterest, and creating an awesome Vegan Recipes board. This recipe I found a while back and have been wanting to try out. The sauce is very similar to my Creamy Vegan Cheese Sauce, but I loved the sun dried tomatoes and garlic in the dish, it went well with the sauce and noodles. It was delicious, and very easy to make.
For a late night snack I had one of my favorite LaraBars; Chocolate Chip Cookie Dough… and another spotty banana.
