My Favorite Things: September

September is one of my favorite months, because it includes the start of fall, as well as my birthday! I guess I was enjoying it so much, it seemed to fly by! But here are some of the things I loved during the best month of the year!

Family time

I was able to go home twice this month, once for Labor Day and then again for a conference. It’s always so great seeing my family, and our new addition Toby!

My Favorite Things: August

Wow, where did August go?! I can’t believe that it’s already September, which is not a complaint at all considering September is my favorite month, but where how did it get here so fast? Lots of exciting things happened in August, and there were lots of favorites to include this month so get ready!

Toby The Puppy

One super exciting thing that happened this month was that our family got a puppy! I was able to go home for a few days before school started back so I could meet the little guy. He is a Chihuahua|Terrier mix, and is absolutely precious. Can’t wait to head down the mountain on my next break from school to visit him again and see how much he’s grown!

My Favorite Things: July

FRESH FRUIT

Summer time means more fresh fruit! Some of my favorites this month were mangos, blueberries, and watermelon. I’ve been having a lot more fruit based meals, and I’m not complaining at all!

MEAT ALTERNATIVES (GARDEIN)

I usually don’t eat a lot of meat alternatives, but this month I seemed to eat it several times a week. I love the Gardein meat alternatives, there are tons of different types and flavors. They are super delicious, and easy to make too! My favorite one has been the grilled “chicken” strips.

What I’ve Been Loving Lately

Banana Ice Cream
Winter always seems to be a sad time for fruit. But bananas always are plentiful, and cheap! I’ve been loving freezing bananas in tupperware and keeping a ton in the freezer. When I want a sweet treat, I just throw a few in my blender with a tiny bit of water or almond milk and blend it up. It creates a sweet, creamy ice cream (without the dairy/fat!). I love topping my banana ice cream with some caco nibs or some peanut butter.

For the delicious bowl down below I took two bananas, a teaspoon of cocoa powder, and a splash of almond milk, blended it up and topped with caco nibs. Yum!

Things I Loved In August

August was a pretty eventful month….Natural Chef school ended, I moved into my first apartment, and I began my junior year of college. There were a lot of new things that I experienced this month and I can’t wait to share them with you all!

Cacao Nibs

I had never tried cacao nibs until this past month, and I can’t believe it’s taken me so long to discover them! They are little vegan gluten-free delicious morsels that you can snack on by themselves, throw them into any cookie recipe, trail mix, bowl of cereal, or oatmeal. Cacao nibs are filled with energy and mood boosting compounds, and they even help to raise HDL (“good” cholesterol). If you love dark chocolate, then these are the perfect snack for you!
