What I Eat In A Day | March 5, 2016

I started off the morning with one of my favorite breakfasts. An Ezekiel english muffin with a slice of chao cheese melted on top, sautéed onion and tempeh, topped with avocado slices and some sirracha. This is a great savory breakfast that is quick and easy to make! I had a banana along side it, and a hot cup of black coffee.

My family and I traveled a few hours to watch my little sister play in a soccer tournament, so you’ll see quick a few snacks in this What I Eat In A Day post. I snacked on a Clif Bar on the drive there, which is probably one of my favorite snacks.

Documentaries Watched In 2015

One of my New Year’s Resolutions for 2015 was to watch at least one documentary every month. I wrote them all down in the back of my planner, and thought it would be cool to share them all with you, and rate each one on a scale from 1-10.

I’m hoping to do the same in 2016, it’s a great way to spend a little time each month educating yourself on different topics and information that’s out there.

Forks Over Knives | Documentary Review

If you’ve been following my blog for a while, you’ve probably heard me talk about Dr. T. Colin Campbell and/or the documentary Forks Over Knives (FOK). The research that Dr. Campbell has done, as well as the information shown in the documentary FOK is mind blowing, and has changed my life in many different ways.

Today, I wanted to do a thorough review on the documentary and hopefully convince you to check it out for yourself! Forks Over Knives is essentially a documentary that is centered around the research done on the connection between animal protein and cancer growth. Dr. Campbell began this research during The China Study. Lots of research has been done over the years on this topic, and FOK puts it all into a very easy to follow documentary. Along with presenting the research in easy to understand words, pictures, and interviews the documentary follows several individuals who are suffering with chronic diseases.

Day In The Life Of A Dietetics Student | September 24, 2015

A fellow blogger and nutrition major that I am obsessed with just wrote a “Day In The Life Of A Dietetics Student” blog post, and it inspired me to do the same!

The beauty of being a college student is never having a typical day, there’s always something different going on. But here is a fairly good representation of how I spend a day being a dietetics student!

On Tuesday and Thursdays I have three classes, the first one at 8:00am. Now that I’m a senior in college, I’ve lowered my getting ready time to about twenty minutes. I set everything out the night before, so all I have to do is get up, wash my face, get dressed, make coffee, and head out the door! I drive to school, so I have to give myself at least 20 minutes to drive, park, and walk to class. My alarm goes off at 7:10, and by 7:30 I’m leaving with hot coffee in my hand.

What I Eat In A Day | September 19, 2015

What a beautiful Saturday we had up on the mountain! Clear skies, a light breeze, and sunshine! My morning started off with a classic Samantha breakfast.. two slices of Ezekiel bread, one with peanut butter the other with blueberry jelly, a banana, and a cup of coffee. I added some almond milk and a few drops of stevia into my coffee, not sure why I’m still into the almond milk in my coffee considering I’ve been a die hard black coffee girl for the past six years. But maybe times are changing in my morning coffee mug. IMG_0228

After breakfast, I headed over the the farmer’s market to help our dietetics club table. We were there promoting local food, as well as sharing the volunteer work our club is doing throughout the community. It was fun getting to people watch, and listen to the beautiful music that is always playing throughout the market. While there, I bought and munched on some yummy kale!
