What I Eat In A Day | September 16, 2015

It’s been too long since I’ve posted a What I Eat In A Day, have you missed them? Today was filled with delicious food, so hopefully it’ll make up for not posting one in a while.

The morning started off with my typical breakfast of 2 slices of Ezekiel bread with peanut butter and molasses and jelly. I paired it with a banana and mug of coffee. Does anyone recognize my mug from a certain TV show??

After breakfast, I headed over the The Children’s Playhouse to give a Kids Can Cook lesson. This semester, I’ve been giving monthly cooking classes for a local children’s museum. Last month, we made green smoothies and this month we made chocolate chip oatmeal cookies (that were also vegan!). The kids are pretty young, so it’s a little difficult to make lessons that are extremely simple and hands on. Cookies were perfect because they got to touch the flour, oats, and sugar. Also mixing batter is always fun! They turned out great, and the kids all seemed to love them!

Spring Rolls | Veganized

I’ve recently discovered not only how to make spring rolls, but how delicious they are. I always thought they looked so complicated, but I’m so glad I realized that they really aren’t difficult to make at all and make a perfect meal. For this recipe, I’m not only going to give you a recipe, but walk you through exactly how to make them! I’m also throwing in a yummy peanut sauce that you can dip the spring rolls in.

My Favorite Things: August

Wow, where did August go?! I can’t believe that it’s already September, which is not a complaint at all considering September is my favorite month, but where how did it get here so fast? Lots of exciting things happened in August, and there were lots of favorites to include this month so get ready!

Toby The Puppy

One super exciting thing that happened this month was that our family got a puppy! I was able to go home for a few days before school started back so I could meet the little guy. He is a Chihuahua|Terrier mix, and is absolutely precious. Can’t wait to head down the mountain on my next break from school to visit him again and see how much he’s grown!

What I Eat In A Day | August 30, 2015

Today, I started the morning off with the last of my orange juice. Perks of living on my own: getting to drink straight out of the bottle! IMG_9761

While my bread was toasting, and water was brewing for my coffee I had a few sprays of my B-12 supplement and ate half of a Brazil nut as a selenium supplement. Did you know that one Brazil nut has your daily dose of selenium?! Pretty cool!

Next up in my breakfast making routine is brewing my coffee. Once I pour the hot water into my French press, I let it sit for about 5 minutes which takes lots of patience!IMG_9762 Continue reading “What I Eat In A Day | August 30, 2015”

What I Eat In A Day | August 22, 2015

For breakfast, guess what I had…? You probably guessed right, two slices of Ezekiel bread with peanut butter and jelly with a side of fruit (two peaches, and a banana). For my coffee, I added in some almond milk and a few drops of liquid stevia. I am usually a black coffee drinker, but lately I’ve been enjoying adding a little almond milk into my coffee.

An hour or two after breakfast, I went to a few thrift stores around town. I absolutely love to go thrifting on a Saturday afternoon, because you never know what you’ll find! Also, who can beat clothes for less than a dollar?!
