Spinach Veggie Wrap

                                  (Serves: 1 person)

Ingredients: 

  • Spinach & Herbs Tortilla (I used a vegan tortilla by the brand Olé Mexican Foods, but
    you can use any type of tortilla)
  • 1 handful spinachIMG_8216
  • 5-6 slices cucumber
  • 2-3 slices tomato
  • 1/4 block tempeh (lightly sautéd)
  • 1/4 avocado slices
  • 1 handful sprouts (I used alfalfa & clover sprouts)

Making wraps are super easy, because they only require chopping up a few veggies, and wrapping them up in a tortilla. They are a great lunch to pack to take on the go.

Chicken-less Nuggets with Homemade Ketchup

Chicken nuggets, without the chicken? You’re probably wondering how that’s even possible, well this recipe is a vegan-friendly alternative to chicken nuggets. Although it doesn’t taste exactly like real chicken nuggets, they are a lot healthier and less processed, and they also contain plant-based protein as opposed to animal protein.


Obviously, you can’t eat “chicken” nuggets without ketchup, so I also created a homemade ketchup recipe. Most store bought ketchup has high fructose corn syrup, food dyes, and preservatives, so making your own is definitely the best way to go.

Sweet Potato Fries

Sweet potatoes, as you know are my one true love in life, so I try to find different ways to eat them. Roasting them is probably one of my favorites, they are so great with seasonings, or just plain. Also, they make for a great transportation for dip to my mouth. Yumm!

I encourage you, if you try this recipe, to experiment with different seasonings.
Some of my suggestions are:
Cinnamon, nutmeg, and ginger
Chili powder, cumin, paprika
Garlic, rosemary, sea salt, pepper

but definitely let your inner chef take control, and try whatever it’s telling you!

Orange Ginger Smoothie

Thanks to Earth Fare, I got a free bag of oranges that I need eat. So after a long workout today, I decided I needed a smoothie that would rehydrate me and would be super sweet…..and this is what I came up with.

Disclaimer: use frozen bananas, I didn’t have any bananas that were frozen, so it wasn’t as creamy.
What you’ll need:
  • three small juice oranges (or two large oranges)
  • two bananas (USE FROZEN, it is seriously so much better!) (also, make sure the skins are as spotty as possible!)
  • 1/4 cup unsweetened almond milk- homemade is definitely better, but I didn’t have any made 😦
  • ginger root- this is optional, but I think it gives it a little zing, plus it has tons of health benefits!
First….
    get all your ingredients together, obviously..
    also, the minion is optional, but I mean who would want to leave him out?!
