What I Eat In A Day | March 5, 2016

I started off the morning with one of my favorite breakfasts. An Ezekiel english muffin with a slice of chao cheese melted on top, sautéed onion and tempeh, topped with avocado slices and some sirracha. This is a great savory breakfast that is quick and easy to make! I had a banana along side it, and a hot cup of black coffee.

My family and I traveled a few hours to watch my little sister play in a soccer tournament, so you’ll see quick a few snacks in this What I Eat In A Day post. I snacked on a Clif Bar on the drive there, which is probably one of my favorite snacks.

While watching her game, I snacked on some clementines, and dates rolled in coconut!

What I Eat In A Day | October 10, 2015

It seems like it’s been a while since my last What I Eat In A Day post, but I guess I can attribute that to tests, papers, and school-related responsibilities. But I’m back with a pretty epic day of food (and drinks!) so hopefully this will make up for it!

This morning, I started off with..you guessed it..two slices of Ezekiel toast and a banana. I ran out of peanut butter, so I’ve been using Earth Balance spread on one slice, and blackberry jelly on the other. I of course paired it all with a warm cup of black coffee.

After breakfast I headed over to our dietetic club’s garden spot at the community garden. The garden spot is such a cool place, because it’s a great escape for all of us stressed out students. Our club tries to get a few people together once a week to weed, water, plant, harvest, etc. and keep the garden up and running. We donate all the food we make to Hospitality House. The Hospitality House is an incredible organization that helps the homeless and those in crisis rebuild and get full care and attention.

What I Eat In A Day | August 30, 2015

Today, I started the morning off with the last of my orange juice. Perks of living on my own: getting to drink straight out of the bottle! IMG_9761

While my bread was toasting, and water was brewing for my coffee I had a few sprays of my B-12 supplement and ate half of a Brazil nut as a selenium supplement. Did you know that one Brazil nut has your daily dose of selenium?! Pretty cool!

What I Eat In A Day | August 7, 2015

I was back at home, and out of my apartment for the week so today’s food was a little different than it typically is. For breakfast, I didn’t have my “usual,” but instead had two slices of (slightly burnt..oops!) Ezekiel cinnamon raisin bread drizzled with maple syrup and two bananas. I also had a cup of coffee, with some almond milk added to it.

My mom has a huge container of herbs, and the basil was growing super tall. I picked off several stems and started to dry them to make some dried basil. It’s really easy to do! All you have to do is pick some stems of an herb, then tie a string (yarn or twine works well) to the end of the stem, and then tie each stem to a coat hanger. Hang the hangers in a dark, dry closet for a few weeks and you’ll have some awesome/flavorful dried herbs! Super simple and inexpensive!
