What I Eat In A Day | February 27, 2018

Lately, I’ve been starting off most mornings with this combination: greens powder & supplements. The supplements that I take every day vary depending on how I’m feeling, or what I think I need more of. Most mornings I stick with these three supplements: astragalus (immune support), Vitamin D (winter months can often result in depleted vitamin D stores), and a vegan probiotic (for a happy tummy).

I’ll be honest, I’ve yet to find a greens powder that doesn’t taste gnarly. This one by Barlean’s is packed with lots of goodness but the taste is definitely strong. I’ve found mixing a scoop of greens powder with some orange juice helps the “medicine” go down much better. I add about 1/3 cup of orange juice into a small jar, a scoop of greens powder and then shake until combined. It takes about three gulps and I’ve already gotten in a bunch of greens, antioxidants, fiber, and nutrients for the day.

I prefer doing this rather than making a smoothie, because sometimes making a smoothie is too time consuming, and so mixing it with some juice is alot easier for me. Continue reading “What I Eat In A Day | February 27, 2018”

What I Eat In A Day | October 24, 2017

I started off the morning with my favorite breakfast that I’ve been making almost every morning lately. It’s the perfect savory breakfast that is super healthy, hearty, simple, and delicious! 

I started by adding about a cup of frozen hash browns to a pan with a tiny bit of olive oil and cooked them until they were crispy. In a separate pan I sautéed crumbled tofu (I add a tiny bit of turmeric to give it some color/flavor), peppers, onion, and kale. At the very end I threw in some garlic and chopped basil for some added flavor and nutrition.

And I don’t stop there… I’ve been packing in even more nutrients by adding nutritional yeast (for B vitamins, iron, & zinc) and kelp flakes (for iodine). I top it all with extra black pepper and some hot sauce for a kick. A dish like this is the perfect meal to start your day off because it’s SO much food, and will keep you full for hours. 

Of course I paired it with a mug of French pressed coffee to which I added in some unsweetened soy milk.

Pumpkin Spiced Granola

Today, I bring to you an incredibly simple recipe that is perfect to snack on all throughout the fall months. This granola is packed full of nutrients and is oil-free, gluten free, nut free, refined sugar free, vegan and still tastes incredible… it doesn’t get much better than that!

This is the perfect recipe to whip up when you’re in a hurry and want a quick snack or need to make a gift for someone special. While the granola is toasting it fills your house with the most heavenly fall scent and creates such a cozy environment.

I decided to use maple syrup as the sweetener instead of sugar, and included flax seeds for a nutty flavor as well as omega-3 fatty acids. The pumpkin seeds are the best part of this recipe, in my opinion, because they provide the perfect crunch while also providing lots of iron, magnesium, protein, and zinc.

What I Eat In A Day | September 1, 2016

I’m back with another What I Eat In A Day post, which are my favorite to write and share! I love snooping in on what people enjoy eating, and I also love sharing some of the things I enjoy eating. I love getting inspiration from other bloggers’ What I Eat In A Day posts, so I hope that you can get some inspiration from mine… even if you’re not vegan!

Breakfast consisted of an everything bagel with Earth Balance, a super ripe banana, a glass of orange juice, and a cup of strong black coffee

Lunch was a little random, but I had some slaw made from a recipe I made last week and wanted to use it somehow. I sautéed broccoli, tempeh, onion, and green pepper with a little soy sauce, maple syrup, and ginger brine. Then wrapped the veggies up with some slaw (shredded cabbage and carrots with some vinegar and Just Mayo) in a flour tortilla.

What I Eat In A Day | October 10, 2015

It seems like it’s been a while since my last What I Eat In A Day post, but I guess I can attribute that to tests, papers, and school-related responsibilities. But I’m back with a pretty epic day of food (and drinks!) so hopefully this will make up for it!

This morning, I started off with..you guessed it..two slices of Ezekiel toast and a banana. I ran out of peanut butter, so I’ve been using Earth Balance spread on one slice, and blackberry jelly on the other. I of course paired it all with a warm cup of black coffee.

After breakfast I headed over to our dietetic club’s garden spot at the community garden. The garden spot is such a cool place, because it’s a great escape for all of us stressed out students. Our club tries to get a few people together once a week to weed, water, plant, harvest, etc. and keep the garden up and running. We donate all the food we make to Hospitality House. The Hospitality House is an incredible organization that helps the homeless and those in crisis rebuild and get full care and attention.
