What I Eat In A Day | September 19, 2015

What a beautiful Saturday we had up on the mountain! Clear skies, a light breeze, and sunshine! My morning started off with a classic Samantha breakfast.. two slices of Ezekiel bread, one with peanut butter the other with blueberry jelly, a banana, and a cup of coffee. I added some almond milk and a few drops of stevia into my coffee, not sure why I’m still into the almond milk in my coffee considering I’ve been a die hard black coffee girl for the past six years. But maybe times are changing in my morning coffee mug. IMG_0228

After breakfast, I headed over the the farmer’s market to help our dietetics club table. We were there promoting local food, as well as sharing the volunteer work our club is doing throughout the community. It was fun getting to people watch, and listen to the beautiful music that is always playing throughout the market. While there, I bought and munched on some yummy kale!

What I Eat In A Day | September 16, 2015

It’s been too long since I’ve posted a What I Eat In A Day, have you missed them? Today was filled with delicious food, so hopefully it’ll make up for not posting one in a while.

The morning started off with my typical breakfast of 2 slices of Ezekiel bread with peanut butter and molasses and jelly. I paired it with a banana and mug of coffee. Does anyone recognize my mug from a certain TV show??

After breakfast, I headed over the The Children’s Playhouse to give a Kids Can Cook lesson. This semester, I’ve been giving monthly cooking classes for a local children’s museum. Last month, we made green smoothies and this month we made chocolate chip oatmeal cookies (that were also vegan!). The kids are pretty young, so it’s a little difficult to make lessons that are extremely simple and hands on. Cookies were perfect because they got to touch the flour, oats, and sugar. Also mixing batter is always fun! They turned out great, and the kids all seemed to love them!

My Experience Attending the Plant-Based Prevention Of Disease Conference

P-POD15Banner260-115

About a month ago, I heard about the P-POD Conference, a plant-based prevention of disease conference being held in Raleigh, NC. I immediately knew I need to go. I started looking at the speakers who would be speaking, and that just made me even more excited. If you know anything about plant-based nutrition, you know Dr. Caldwell Esselstyn. He was going to be one of the main speakers there, and that just confirmed I needed to be there.

Dr. Esselstyn sharing how he’s reversed heart disease in his patients with food alone!

On Thursday after my last class of the day, I headed down the mountain. I live close to Raleigh, so I just stayed at home and drove back and forth each day for the conference. It was great being home for a few days, because I got to snuggle with our pup Toby and see my family.

My Favorite Things: August

Wow, where did August go?! I can’t believe that it’s already September, which is not a complaint at all considering September is my favorite month, but where how did it get here so fast? Lots of exciting things happened in August, and there were lots of favorites to include this month so get ready!

Toby The Puppy

One super exciting thing that happened this month was that our family got a puppy! I was able to go home for a few days before school started back so I could meet the little guy. He is a Chihuahua|Terrier mix, and is absolutely precious. Can’t wait to head down the mountain on my next break from school to visit him again and see how much he’s grown!

What I Eat In A Day | August 30, 2015

Today, I started the morning off with the last of my orange juice. Perks of living on my own: getting to drink straight out of the bottle! IMG_9761

While my bread was toasting, and water was brewing for my coffee I had a few sprays of my B-12 supplement and ate half of a Brazil nut as a selenium supplement. Did you know that one Brazil nut has your daily dose of selenium?! Pretty cool!

Next up in my breakfast making routine is brewing my coffee. Once I pour the hot water into my French press, I let it sit for about 5 minutes which takes lots of patience!IMG_9762 Continue reading “What I Eat In A Day | August 30, 2015”
