For breakfast, guess what I had…? You probably guessed right, two slices of Ezekiel bread with peanut butter and jelly with a side of fruit (two peaches, and a banana). For my coffee, I added in some almond milk and a few drops of liquid stevia. I am usually a black coffee drinker, but lately I’ve been enjoying adding a little almond milk into my coffee.
An hour or two after breakfast, I went to a few thrift stores around town. I absolutely love to go thrifting on a Saturday afternoon, because you never know what you’ll find! Also, who can beat clothes for less than a dollar?!
After some thrifting adventures, I came home to eat a little lunch. I had an apple with a few spring rolls that I dipped in a lime peanut sauce. Check out the recipe here!
For dessert, I had a coconut cream pie larabar. One of my favorite flavors!
A few hours later, I decided to head to one of my favorite coffee shops to get some studying done. Before I left, I snacked on a few dates that I rolled in some shredded coconut. I had never tried this before, but it’s definitely my new favorite snack!
While I was studying, and getting work done, I had lots of water and an iced black coffee.
After a long, yet productive study session I came home and was ready for dinner! While fixing up my food, I drank a glass of orange juice (with extra pulp!).
For dinner, I made some rice with sautéd zucchini, peppers, and broccoli. I added in some liquid aminos and rice vinegar to give it some Asian flavors. I topped everything with some limes and avocado.
While eating dinner, I watched an awesome documentary called Farmland. It’s on Netflix, you should check it out!

By the way, I have a girl in my nutrition grad program at Winthrop that just got her nutrition undergrad degree at Appalachian State. Made me think of you!
